What do you eat on a hot day? For me it is always cold noodles. I recently developped this Thai Cold Noodle Salad recipe with all locally sourced ingredients and condiments.
I want to share with you so it can help to make your summer day relaxed and fun, even with kids. It is super easy to make but will give you plenty of flavours in a hot summer day. Here you go.

Thai Noodle Salad
Ingredients
Thin Asian noodles 1pack
Carrots 1, peeled
Navel orange (sweet) 3
Smoked beef 3 pieces
Coriander 1 bunch
To make the Thai sauce
Fish sauce 1 portion
Palm sugar 1 portion
Lemon juice 1 portion
Bird eye chilli 1, sliced
Steps
1. Prepare the Thai Sauce.
This sauce is magic and I learned from the small carts in Chiang Mai street market. You need the fish sauce, the lemon juice and the palm sugar in a 1:1:1 ratio.
With the fish sauce, I found this fantastic one when we visited Thailand, again saw it in the street market. Super beautiful flavour and tastes much better than any products available in Australia. Then magically, I discovered Canberra has it in woolies. Lucky heh…

Step 2. Peel the orange, slice the carrot and roast beef.
Step 3. Cook the Asian thin noodles in boiling water until soft and soak in cold water for 5 mins.
Step 4. Mix all the above, add the Thai sauce.
Step 5. Add chopped coriander, mix and serve.
Now, here it is, my version of the Thai Noodle Salad. Super ease to make but worths the tastes. You can even get kids involved to have then learn cooking simple dishes š
