{Guest Recipe} Mother’s Day Special – Herb Crusted Prawns with Tomato, Feta & Basil

Mother’s Day is tomorrow! Please accept my best wishes to all mothers and female readers. Most of us would want to give our mothers a special and memorable day. If you are not taking mum to restaurants, why not cook something delicious for them?

Gourmet Garden has contributed a simple and easy recipe for Mother’s Day for our community.

Herb Crusted Prawns with Tomato, Feta & Basil

 

Herb Crusted Prawns

 

Ingredients

800g whole green prawns, peeled and deveined

2 teaspoons sumac

1 lemon, zested and juiced

1 teaspoon Gourmet Garden Garlic Stir-In Paste

2 tablespoons Gourmet Garden Lightly Dried Parsley

4 tablespoons olive oil

½ teaspoon black pepper

300g vine ripened tomatoes, diced

150g feta cheese, diced

2 tablespoons Gourmet Garden Lightly Dried Basil

1 red onion, finely sliced

Olive oil

Salt and black pepper

Steps

1. Mix together the sumac, lemon zest, garlic, parsley, olive oil and pepper and rub over the prawns. Refrigerate until required.

2. Mix together the tomato, feta, basil, red onion and dress with lemon juice and extra virgin olive oil. Season with salt and pepper.

3. Grill or BBQ the prawns for about 2 minutes on each side.

4. Serve immediately with the tomato salad.
