    1. Nanas make the best EVERYTHING. My Nana makes wonderful mince pies at Christmas. (When I was a child I didn’t want to try them because I thought the ‘mince’ was minced MEAT not minced FRUIT!) 🙂

  3. Mine isnt so much a recipe but my family loves to have our BBQ and seafood platters on Christmas day as its just way too hot to have anything hot eg Roast etc, but to choose I really look forward to the seafood platters each year!

  4. Its all about my late grandmothers Christmas Fruitcake which she continued to make at xmas for more than 30 years of my live and over double that of her own life.. Nannas xmas cake is the best and the ultimate recipe for the xmas table.

    Children love to help… so let your little one roll the Apricot Balls in coconut, for a festive treat at Christmas time!

    Materials Required

    1 packet plain sweet biscuit – such as milk arrowroots
    1 can sweetened condensed milk – skimmed is fine also and better for you
    20 to 30 apricots – approximately
    1 cup desiccated coconut

    Method

    Place the biscuits inside a plastic bag, wrapped inside another bag and if desired a third bag to prevent the crumbs escaping from over zealous crushing. Allow your little one to bang, crash and rolling pin the biscuits until they are small crumbs. Pour into mixing bowl.
    Using a pair of kitchen scissors cut the apricots into small pieces (you may need a couple of extra apricots for samples). Add to the mixing bowl.
    Pour condensed milk and 3/4 cup of the coconut into the mixing bowl.
    Let your little one have fun mixing all the ingredients together but they may need a bit of a hand as it is quite stiff towards the end.
    Using 2 teaspoons, scrape a teaspoon full of mixture into a container of the remaining 1/4 cup coconut. Have your little helper roll the mixture until it is coated in the coconut and then place apricot balls onto the tray.
    Place the tray of apricot balls in your refrigerator for 30 – 90 minutes to make them nice and firm and chewy. YUM!

I love to make snowy coconut icing at Christmas, either for a whole cake or for a batch of little cupcakes. 🙂 I’m not much of a decorator but I like making little winter wonderlands on the cakes, even if it’s stinking hot summer here! It’s a meringue icing, you whip egg whites and gradually add icing sugar, before beating in some coconut at the end and smearing generously on your cakes. I’m logged into Rafflecopter as Kate Ryan 🙂
